I notice spots on Penelope's back legs on her elbow so to speak. I
stopped by the vet and let him know so I got her another round of
medicine and drops to put on the actual spots. She hates the medicine
and I have a real problem getting her to eat it. She will hold that pill
in her mouth and not swallow just to spite me! I finally got it down
her tonight but tomorrow night will be another adventure. I am also
putting the drops on bear chin just to make sure nothing is going on
there.
I get to work again this Saturday and I hope I get to leave around 10pm
again. That is kind of nice to get home and relax. I started a load of
laundry tonight and have 2 more to do I am sure. I made goulash last
night. I fried hamburger with a small jar of garlic, 1 orange pepper. I
boiled the water and put in the pasta to cook. I finished the meat and
added the two together with 1 can of tomatoes and 1 can of mushrooms. I
had a separate tupperware for DH. Today I added 2 cans of tomatoes and 2
cans of mushrooms to his so that pretty much filled it up. I sent that
for his lunch tonight. I brought the other batch to work and Scott and I
ate it and critiqued it. I think next time I will actually add a little
onion ( I know) but I am willing to put in a little and cook it until
clear just for a little sweet flavor. I also want to add more pepper,
tomato and mushroom to the pasta. The meat was about a pound and a half.
The garlic was perfect! I know Mom had one that she put in the oven but
we don't eat it the same day so I didn't see much of a point in that.
It was pretty easy to put together and I am happy with the first try.
Anyone have any goulash recipes?
My friend Tuppe made ceviche with cooked shrimp. I really enjoyed it
without the onion and I am thinking of how to make it for us. DH doesn't
like a lot of cilantro and I understand it is a main piece in the dish
but I think with him less is more. The chips are the biggest downfall
otherwise I don't think it is too high in calories.
I made my chicken, avocado, tomato and feta cheese dish. This time I
ended up mixing everything until it was pretty mushy which is different.
Last time I made a small amount for Scott & Tuppe and I to try, it
was just chunks of each not smooshed together. I usually eat it cold and
Scott eats it hot. I decided to bring crackers for something new. I ate
some cold and some cold on a cracker with salt and pepper. I heated
some up and ate it too alone and with cracker. Each part brings a whole
new flavor and complexity to the dish. Overall it remains myself, Scott
and Tuppe's favorite that I make so far. I am thinking of dusting off
my enchilada bake recipe if I can find it. Thanks Johanna!! Mom picked
me up a slow cooker cook book on her last trip to Branson and I have
just not found the time to take a look.
